Get Made-to-order Musubi At This Nifty Uws Hawaiian Spot
Chi Ian Chan spent his first 30 years in O'ahu, Hawaii, growing up in Honolulu's Chinatown. And he's quick to tell you that he never surfed a day in his life (he prefers skateboarding). Four years ago, he left his native island for Manhattan—specifically, Hell's Kitchen—to be with his now-wife and business partner Lizzy Han.
Chan loves his new home, but he told Hell Gate that the thing he missed the most about life in the South Pacific was musubi, the classic Hawaiian rice-and-Spam snack that's ubiquitous in Honolulu, but shockingly difficult to find here.
"There was no musubi in New York that satisfied my cravings," he said, "so I made my own." Chan started selling it over a Facebook neighborhood group. That led to a series of Sunday musubi pop-ups at an Upper West Side sushi restaurant, and then, upping his commitment in May of 2025, to signing a lease for a slender space on prime West 72nd Street. After sixteen months of waiting on permits and for construction to be completed, the neighborhood now boasts the city's only musubi shop, Kine Musubi.
