Opening a cookie bakery in Toronto these days is a bold move. You've got the greats to contend with — the Craigs and Andreas of the world — not to mention major chains and locals' undying loyalty to their neighbourhood bakeshop.
Zeyneb Unver, the founder and baker behind Eight Cookies, was, seemingly, unfazed by that truth, and it's a good thing she wasn't.
Built out of Zeyneb's home kitchen in 2024, Eight Cookies is her love letter to Toronto's culinary diversity. When she began selling them online, it became increasingly evident that the city loved them right back.
Offering eight flavours at any given time, some of which rotate while others remain firmly in place, Eight Cookies' main draw is the "not-too-sweet" factor, the pursuit of which inspired the entire operation.
After a handful of pop-ups and continued growth of her online business, Zeyneb eventually made the leap to open her own brick-and-mortar, which officially launched on Sept. 5 and has drawn considerable crowds ever since.
Already boasting a perfect 5-star rating on Google, the shop's cookies have been eagerly praised for their satisfying chewy texture and unique flavours. It's still early days, but it looks like Toronto may just have a new go-to cookie shop on our hands.
