SHN: What inspired you to pursue a career in senior living dining, and what continues to motivate your work today?

Wiggan: I was inspired to pursue a career where I would experience the warmth, connection, and sense of family that senior living can provide, and where I could make a meaningful difference in the lives of older adults.

With more than 22 years of culinary experience, I am passionate about creating exceptional dining experiences that challenge the outdated stereotypes of assisted living food. Knowing that I can bring joy, comfort, and dignity to residents through outstanding food and service is what continues to motivate me every day.

SHN: What are the top three trends shaping the future of dining in senior living right now?

Wiggan: First, there is a growing emphasis on using fresh, high-quality, seasonal ingredients. Residents are looking for meals that are flavorful, nutritious, and made with fresh products whenever possible.

Second, creativity is becoming increasingly important. Senior living dining is moving beyond traditional menus, with chefs thinking outside the box and incorporating modern culinary techniques and presentation, whether it’s unique plating, creative garnishes, or adding elements of gastronomy that make each meal feel special and restaurant-quality.

Third, there is a greater focus on wellness and choice. Residents expect healthy options that accommodate a variety of dietary preferences, including vegetarian and vegan selections. Providing diverse, thoughtfully prepared menus ensures every resident can enjoy a satisfying dining experience while supporting their overall health and well-being.

SHN: What is the biggest barrier to innovation in senior living dining today, and how can organizations effectively overcome it?

Wiggan: One of the biggest barriers to innovation I see in other companies is a lack of continuing education and opportunities for culinary teams to expand their skills and knowledge. Organizations can overcome this challenge by fostering a culture of learning and development.

By equipping professionals with the latest culinary techniques, nutrition knowledge, and hospitality best practices, they become better positioned to elevate the dining experience for residents.

SHN: In one word, how would you describe the future of dining in senior living – and why?

Wiggan: Transformative.

Senior living dining has evolved tremendously, and I believe its future is incredibly bright. With the quality of products available today, the creativity we bring to every menu at The Bristal, and the passion and motivation of culinary professionals, we have the opportunity to redefine expectations. 

SHN: How do you see technology transforming dining operations and the resident experience in the next few years?

Wiggan: Technology is advancing rapidly, and it’s already transforming the way we deliver dining services in senior living.

At The Bristal, we’ve embraced digital solutions like eMenuCHOICE, which helps our team provide more personalized and efficient service. The system includes built-in safeguards to track allergies, dietary restrictions, and special diets. The technology also streamlines the ordering process, allowing our dining team to serve meals more efficiently while enhancing the overall resident experience. 

Looking ahead, I see even greater opportunities to engage residents and families by providing digital access to daily menus, past meal selections, and the ability to place meal requests from virtually any device.

SHN: Reflecting on your career, if you could give yourself advice on your first day in senior living dining, what would it be and why?

Wiggan:   Don’t hold back on creativity. I would encourage my younger self to embrace new ideas, take risks, and continue pushing the boundaries of what senior living dining can be. Creativity, passion, and a willingness to innovate are what allow us to elevate the experience and make every meal an opportunity to connect with residents.

SHN: What qualities or leadership traits do you think DISHED Senior Living Dining Innovation Award winners must embody?

Wiggan: Award winners should embody integrity, professionalism, and a strong commitment to their organization’s core values. Most importantly, they are willing to go above and beyond every day, making personal sacrifices when necessary to ensure residents receive an exceptional dining experience. True leaders never lose sight of the impact their work has on the lives of those they serve.
