Mn 30-min Meal Breaks - Can I Choose To Work Through Them?

Bottom Line: Can a company legally force me to clock out for a 30-min lunch break if I'm working through them? Looking for clarification of the law and (free) resources on my options.
Context:
I am an hourly office employee where I regularly work 8 consecutive hours, or more, a day. I'm a project coordinator and my workload and meeting schedule are such that I work through lunch every day. Personally, trying to find time to clock out for 30 mins during my day is a larger hassle than just working through lunch and clocking out after 8 hours worked.
HR has informed me that I must clock out and take the 30-min lunch provided to me. I told them I'd be happy to sign a waiver every day saying the company provided me a lunch and I chose to work through it, but they are not willing to do this. Am I misunderstanding MN law that employees are "allowed" a break but I can choose to not take them? Is it legal for them to force me to clock out? If not, what are my options to advocate for my rights?
