Ex Tried To Kill Me A Few Years Ago And Still Looks For Me. I’m Now Getting Married To Someone Else And Possibly Moving Out Of State. What Is The Difference Between A Sealed Vs Unsealed Marriage Licenses?

First and foremost, I apologize for the length of the title/post and I greatly appreciate any knowledge you can provide for me here.
Five years ago I was in a very long term relationship with someone when they unfortunately “snapped”. I came to find out afterwards that it was his first onset of some very serious schizophrenic disorder. Anyways, he threw me into the trunk of a car while talking to himself, I broke out using the inner pull tab for kidnappings, I ran back to our apartment, called 911, he came back, he broke through a large window to get in, he then broke down a door with his bare hands to get into the room I was trying to be safe in, and then he hit me with an aluminum softball bat repeatedly before help arrived. I was granted a temporary restraining order, he made bail, he broke it, he made bail again, and then he broke it again. While on bail, he located me at a friend’s place and put an airtag in my car. I got a notification a few days later and then I literally ditched my car in a storage unit in California and moved out of state to be safe. The temporary restraining order was not renewed due to my being so far away, but it should be noted that I later found out that he broke the order to try to contact me several times while it was still in place.
Three years ago I moved back to California to be in a relationship with my current partner (a very safe and kind man). My ex has made multiple attempts to contact me and reconcile. In a message to someone else he does not know I’ve seen (friend’s phone), he said that he was forced into psychiatric treatment and then was able to leave but that was it. He said he “looks for [me] everywhere” and that he is no longer on medication and has no intentions on going back even though he admitted to already dealing with symptoms.
My current partner and I are engaged to be married and are interested in moving out of state a few months after the wedding so our next chapter will be far removed from all of this. Here is where I’m running into a bit of a dilemma: everything I’m reading says that the private marriage license can only be accessed by us and the state of California. I’m worried if I do the public license that my ex will find out, find me, and kill us all (literally no joke).
Thus, my question is this: if I get the sealed/private certificate can I unseal it later when we move so that agencies in other states can access the information? If not, can my partner and I get married again in another state so we’re legally married there (Oregon or Washington) or would that be illegal because we technically got married twice (like anti polygamy laws)?
