My Boss Is Withholding My Last Check.

So I worked at my recent job for 3 months and did pretty well. It was a kitchen inside a gas station with it's own little name brand. I quit last Saturday on the 27th as I didn't agree with how my boss was doing things and tried to get us to sell rotten food(not directly, by pulling out the "good looking" meat and placing it in another container on ice, I told my relief not to sell it).

Now today is the 3rd and I went up to collect the last of my money and he said it's his policy to hold final checks of those for 2 weeks if they quit. Now I had my mom with me and I'm no slacker to the laws but even I know that is bs. He also said it's illegal to just quit which I also know is B's this state is an at will state basically.

Any help will be appreciated, thank you.

Edit: Thanks for the information and help I filed a claim and to any new viewers that are familiar with the law due note that he pays weekly so the next check would be today on the third.

Hopefully this all goes well, I don't need that last little bit of money however having it will help a tiny bit more than not having it, I would've waited the 2 weeks but I know it's illegal and I'd rather wait 3-4 weeks to get my money and have this on record than to wait 2 weeks and possibly still not get my check.
