Selling My Car To Family Friend, She Has To Pay Over Time

Location: Florida

I am about to move to NYC so I have to sell my car.
For reference I have a 2019 MINI, stellar mechanical condition but minor cosmetic imperfections on the body. When I look online if I sell it to Carvana etc they offer 5k vs a private sale estimates 8-10k. So obviously I took the private route.
A week ago my mom calls me to say that her long time close friend has a daughter who wants a MINI and the mother is offering to buy my car. She doesn’t care about the stickers on my bumper (which carvana generously took off 1.5k my price for lol), and the only usage would be for her daughter to drive to school & work.

Here is the caveat:

- The mother calls me and is upfront about her situation, she is going through a divorce and is selling her house but the husband (soon to be ex husband) is stalling the process in any way he can, she says she has a court order and he has been avoiding the situation.

- She says that she wants to pay over time and agrees to 8k. I will be stopping by her house to show her and her daughter the car this week.

- I want to outline how she will pay, we have not spoken about the exact details of payment yet until she sees the car. I do trust her since my mom does and has known her for a few years.

The mother offered to park the car at my mom’s place or the house of her mother’s (which is 3 hours up north from our location to ensure nobody touches it) and said her daughter would not drive it until the sum is fully paid off. She also offered to not transfer the car title over until it is paid off in full.

My friend is a notary, I am wondering what can I do within legal terms to prevent myself from getting screwed by this. I am leaving the state in a month (my mom does live in the state).
